Dave’s Mini Donuts: Couple develops a taste for business with apple cider nuggets

Dani and David Rosenthal’s business model is full of holes.

The husband and wife team are the owners of Dave’s Mini Donuts — a roving concession stand that serves mouth-watering, slightly-bigger-than-bite-sized apple cider doughnuts, as well as home-roasted coffee and other culinary fare.

 

For a second year, visitors to Ives Concert Park in Danbury can get a taste of the Rosenthals’ doughnuts during the Ives summer music series.

 

The Rosenthals, based in Pawling, N.Y., serve treats at Renaissance fairs and rock festivals all over the country. They and their crew just returned from the Bonnaroo Festival in Tennessee. They spend most of the winter working in the warmth of Florida.

 

The two have been in the doughnut business for four years, but it started as a sideline. David, a professional chef, was between jobs and wanted to earn some extra dough.

 

He came up with mini doughnuts because he wanted something that set him apart from other food vendors.

 

“He wanted something that was different and unique and the doughnuts were that,” said Dani, 27. “It has gotten us into shows that, if we were fried dough or corn dogs, we might not have been able to get in with.”

 

At first, Dani helped part time, but after their success at the Gathering of the Vibes in Bridgeport a few years ago, they realized their business had great potential. “I quit my job and decided to do this 100 percent,” she said.

 

Phyllis Cortese, executive director of Ives Concert Park, said she was happy to have Dave’s Mini Donuts at Ives. She added that although this is only the couples’ second year working at the park, “They’re family already.”

 

Some big-name performers have developed a taste for the mini doughnuts. This May at the Hartford music festival B.O.M.B. Fest, rapper Snoop Dogg became a fan.

 

“I met Snoop’s brother and he was like `Oh my goodness, Snoop needs to taste these,'” Dani said. The couple filled a massive order for Snoop and his entourage.
